As I promised here is one of my favorite recipes. It’s green, easy, diary-free, fast and healthy.
All you need for 3-4 people is:
a big bunch of fresh basil
1 clove of garlic
juice of half a lemon
4 tablespoons olive oil
4 cherry tomatoes
Mix all the ingredients together while the pasta is cooking as it takes you 5-7 minutes to prepare this avocado pesto. When the pasta is ready add the pesto and voilà, it’s ready. Eat it right away otherwise the pesto turns brown.
